This recipe is one my momma always made when I was growing up and my very weird brother who doesn't like normal cake and icing ALWAYS requested this on his birthday...and I say that in past tense but he just turned 21 a few months ago and still asked my mom for it! It is a very simple recipe, and infact I'm making this very cake for a pot luck baby shower I'm going to. When asked what I was bringing I thought long and hard and due to my current Jello kick (only 5 calories and no carbs!) I have a ton of it in my cupboard and so Jello Cake was what came to mind first! A Jello Cake is a VERY moist, fruity flavored cake with cool whip for topping...I'm always a fan of cold cake, and you can't get any more moist then a Jello Cake!! You can make it with any kind of Jello you want, I'll be using Berry Blue because I'm going to a "It's a Boy" Baby Shower! My favorite is Strawberry, but a friend recommended I try watermelon and that sounds amazing too!! :)

As you can see my original plan of having "Berry Blue" got a little derailed while I was in auto pilot making Jello, I normally make Jello for snacks in 6 cup batches, so after my 4th cup of water it finally dawned on me- oops...I was only supposed to use 2 cups. So it ended up being a Strawberry Jello Cake, and it was a big hit at the shower!! :)
